In certain areas of the Southwest of Asturias, between August and September the calluna vulgaris (or “setembrina” in Spanish because of the month of September) blossoms. The honey from this flower is very special because of its unusual texture. In addition to having an intense and persistent aroma, it also stands out for its jelly-like mouthfeel, due to its high viscosity.
