Heather honey comes from the nectar of heather, Erica australis, Erica umbelata and Erica arborea, which bloom between March and May on the hillsides of the innermost area of the Southwest of Asturias.
This type of honey is very aromatic, strong and with a very characteristic flavour. During the heather flowering season, the climate is still unstable, which causes the harvest to be irregular from one year to the next.
